SHOPPING LIST

1 lb ground Caribou (*or ground meat of your choice)
1 small yellow onion
1 can (15 oz) tomato sauce
3 vine ripened tomatoes
1 large avocado

1 pkg (8 oz) sharp cheddar cheese
flour and/or corn tortillas
chili powder
garlic salt or garlic powder
ground pepper
cooking spray or oil

*optional topping ideas:
diced green chiles
jalapeno peppers
sour cream
salsa
refried beans, pinto beans or black beans

INGREDIENTS

1 lb ground Caribou (*or meat of your choice)
1 small yellow onion (or half of medium) – diced
1 can (15 oz) of tomato sauce
1 tbs chili powder (depending on your preference)
½ tsp garlic salt (if watching sodium, use garlic powder)
½ tsp ground pepper
cooking spray or oil
flour and/or corn tortillas

TOPPINGS

3 vine ripened tomatoes – diced
1 large avocado – diced
1 pkg (8 oz) sharp cheddar cheese – shredded

OPTIONAL TOPPINGS

Diced green chiles
Jalapeno peppers
Sour cream
Salsa

DIRECTIONS

Lightly spray a large frying pan with cooking spray or coat with vegetable oil, add diced onions and cook on medium heat until opaque. Add ground caribou (*or ground meat of your choice) and cook until browned, slowly add tomato sauce until you reach desired consistency (everything coated but not runny). Add garlic salt or powder, chili powder, and pepper, turn heat to low and simmer, stirring occasionally.

While meat is simmering, dice your tomatoes and avocado’s, shred cheese and prepare your flour tortillas per package directions. If using any additional topping’s get them ready as well and I like to set everything up as a topping bar.

Turn off and remove meat from heat. Load up your taco’s with fixins and enjoy!

*optional meat choices: I have used ground Elk, Deer, Beef, and Turkey in this recipe and they are all amazing! Feel free to experiment with what you have harvested, it is a great all around recipe. If you are using a fattier meat like beef, you may need to drain the fat off before adding the tomato sauce.

Occasionally we like to throw all the cooked and prepared ingredients on top of tortilla chips and eat like nachos! I hope you enjoy it as much as my family does! They ask for it over and over!
